We absolutely love Mexican food! One thing we were pleasantly surprised with was how much we still were able to eat of it when we began eating clean. We've come up with many variations over the past 6 months or so. Tonight we used ground beef as our base and added the rest. One thing that I like to do is shred my own cheese. I do this for 3 reasons. One, it's healthier. When you buy shredded cheese at the store there are many extra ingredients added to make it not stick together. Two, it tastes better. Three, it melts better. I've found a wonderful Pampered Chef cheese grater that I use. I typically grate 1-2 8 oz blocks at the same time, and that can last my house anywhere from 1-2 weeks.
Ingredients tonight:
1 pound of lean ground beef or ground turkey
1 package of taco seasoning (80/20 rule here!)
sharp shredded cheese
romaine lettuce
can of organic black beans (drained and rinsed)
can of corn (drained and rinsed)
organic salsa
Cook meat, drain, and add seasonings, simmer. Mix corn and black beans together and cook in microwave. On this plate there are 2 greens, 1 yellow, 1 red, and 1 blue (21 Day Fix containers).
*Sometimes we will put an orange container of Italian dressing on it too!
