Oh my goodness! This is the best new recipe I have tried in a long time. It's 21 Day Fix approved. Each serving is 1 red, 1 green, 1 yellow, and 1 blue. It's kind of spicy for little kids, but if you love Mexican food, the spice will not turn you away! We made this last week, and I am making 2 batches today to meal prep for lunches. To make sure I have the right serving size, I cut it into 6 equal pieces before serving. 6 days of lunches and we are having green beans on the side. Yum!

I've been getting a lot of feedback that clean eating is expensive. It's not! Especially when you make a weekly plan and stick to only buying those foods on your plan. Everything in this meal was bought at Aldi, except the corn tortillas (which they now have at Aldi), diced chiles, and meat. This is so good! You don't want to miss out on this healthy version of Mexcian lasagna!
Here's the recipe!
12 corn tortillas
1 can fat free refried beans
3 pack of colored peppers
1/2 large onion
1 pound ground turkey or beef drained
2 cans of diced chiles (Aldi has these sometimes)
6 blue containers of shredded cheddar cheese
1 package taco seasoning
A little olive oil
Dice peppers and onion and cook in skillet with olive oil. Meanwhile, cook meat and drain. Add chiles to meat and cook. When pepper mix is starting to have the grilled effect, mix in with the ground beef/chiles mixture. Add taco seasoning and 1/4 cup water. Simmer.
In a baking dish, lay 6 tortillas on bottom of pan. Later with half a jar of beans. Later with meat mixture and cheese. Repeat. Bake until cheese is melted for about 30 minutes or so at 375 degrees. Cut into 6 equal pieces.
