Tonight, Jeremy requested I make him some meatballs for his lunch tomorrow while he was out mowing grass. I began my normal routine of getting out ingredients when I thought, "Hmmm... I wonder what it would taste like with salsa in it instead of ketchup?" One reason was I wanted to make sure they were as clean as could be. I know ketchup is loaded with sugar, and I need to check and see if they make organic ketchup. I'm sure they do. So I substituted organic medium salsa for ketchup and they turned out really good!
Ingredients:
1 pound lean ground beef or ground turkey
1/2 cup organic salsa (choose your own level of intensity)
1 egg
whole wheat bread crumbs 'til the consistency is correct
Mix all ingredients together and roll into balls. Makes about 9 balls (a little bigger than a golf ball). Bake at 375 degrees for 30 minutes. Enjoy!
